Chicken with White Beans, Tomatoes and Sage
Buried underneath the chicken in this photo are Canneloni beans, tomatoes and sage. This is one of the easiest one-pot meals you can make and it works just as well in a crock pot as it does in the oven. Here I’ve used boneless, skinless chicken thighs but you could use any cut of chicken. You could also vary the type of beans and herbs.
Chicken with White Beans, Tomatoes and Sage
1 lb. boneless, skinless chicken thighs
1 large can Canneloni beans, strained and rinsed
1 small can diced tomatoes, strained
1 bunch sage
About 3 cups chicken brothAdd the beans to a dutch oven or crock pot. Stir in the tomatoes. Lay the sage on top of the tomatoes and beans. Add the chicken on top of the sage. Pour over the chicken broth to cover the chicken thighs. Bake at 275 degrees for about 2 hours.
