Citrus-Marinated Olives
The holidays are coming up and it’s always nice to have something pre-made that you can pull out at the last minute for a quick appetizer or snack. The citrus just livens up the olive flavor and the chili flakes provide just a little heat along with the garlic. Here I’ve used pitted Kalamata olives but you could use any combination of green or black brine-cured olives that you like or have on hand. I think the cilantro adds its unique flavor but if you’re not a fan, just leave it out.
Citrus-Marinated Olives
3 cups olives
1 cup olive oil
1/4 cup chopped fresh cilantro
1/4 cup lemon juice
1/4 cup orange juice
6 large garlic cloves, thinly sliced
3 Tbls. chopped fresh parsley
1 Tbls. grated lemon peel
1 Tbls. grated orange peel
1/4 tsp. dried crushed red chili flakesCombine all ingredients in a large heavy-duty resealable plastic bag. Shake bag to blend the ingredients. Refrigerate at least 1 day, turning the bag occasionally. Transfer the olives and some of the marinade to a bowl. Let stand 1 hour at room temperature before serving.
