Elfin Shortbread Bites
December 25th, 2007 | by JanetAren’t these cute little niblets and so festive! I’ve made many flavors and shapes of shortbread but this one definitely takes the “fun” ribbon.
Elfin Shortbread Bites
1 1/4 cups flour
3 Tbls. sugar
1/2 cup butter
2 Tbls. red and green sprinklesPreheat the oven to 325 degrees.
In a food processor, pulse together the flour and sugar. Add the butter and pulse just until the mixture is in fine crumbs. Pour the mixture into a bowl, add the sprinkles and stir. Form the mixture into a ball and knead. This is a really important step in order to make the next steps easier.
Push the dough out into a 7 x 6 inch rectangle. Cut into 1/2 inch squares. Separate the squares on the cookie sheet.
Bake for 12 to 14 minutes. Transfer to wire racks to cool.
