Grilled Pineapple with Rum Cream Sauce
March 23rd, 2008 | by JanetGrilling fruit is a terrific picnic dessert. The sauce can easily be made ahead, or you can just eat the pineapple or other fruit without a sauce. We grille the pineapple while the coals are still hot after pulling steaks off the grill. One trick is to leave the fruit in larger whole pieces, rather than skewering smaller pieces - it’s much easier to cook evenly and to also turn on the grill. This sauce would be great for all kinds of fruit, including bananas or grilled peaches.
Grilled Pineapple with Rum Cream Sauce
Makes about 1 1/2 cups sauce
2 pineapple spears per person
4 Tbls. butter
1/2 cup brown sugar
1/2 cup heavy cream
1/4 cup rum
1/4 cup fresh lime juiceGrill the pineapple on each side for about 5 minutes. Combine the butter, sugar and cream in a sauce pan and bring to a boil for the sugar to melt. Take off the heat and stir in the rum and lime juice. Spoon the sauce over the pineapple and serve.
