Grilled Tarragon Chicken Breasts

The grilled tarragon chicken breasts are one of our “go to” mid-week entrees.  We probably eat them a couple of times each month.  You really need to use fresh tarragon for this dish, however, we use Real Lemon juice rather than fresh squeezed lemon juice.

Grilled Tarragon Chicken Breasts

4 boneless, skinless chicken breasts
1 medium onion, chopped fine
4 Tbls. fresh tarragon, chopped
3/4 cup lemon juice
1/2 cup vegetable oil
salt and pepper to taste

Combine the ingredients in a medium, non-reactive bowl and marinate the chicken for about 1 hour in the refrigerator.  Grill the chick for about 5 to 7 minutes per side, depending on the size of the chicken breasts.
