Jerk Marinade
Just in time for 4th of July weekend - here’s a great and simple jerk marinade recipe. There are a gazillion ways to make jerk - and it generally involves a spice rub and a marinade. When we want to take the short cut, though, this is our favorite marinade. You only need to marinade the chicken for a minimum of an hour and you can adjust the heat for your particular tastes. When I want it with enough heat so I can feel it but also be able to taste the other ingredients, I usually use two large jalapenos instead of the habaneros.
Jerk Marinade
3 habanero peppers, seeded and chopped
2 bunches scallions, chopped
1 medium onion, chopped
4 cloves of garlic
2 inches ginger
1/2 cup total combined lime and/or lemon juice
1/2 cup soy sauce
1/2 cup white wine vinegar
2 Tbls. allspice
1/4 cup oil
1/4 cup fresh thyme
1 Tbls. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 cup brown sugarCombine all of the ingredients into a food processor and process until smooth.
