Guava Glaze
Guava has a terrific sweet and tart flavor that makes for a terrific compliment to pork (as shown here) but it would also be a great glaze for chicken. I’ve tried several guava glazes and this one, adapted from an Emeril recipe is my favorite. His original recipe calls for guava jelly but I use the paste instead (in the Goya section of your market) and also use quite a bit less sugar. This picture was taken from a party we had where we skewered grilled pork ahead of the party and at the last minute broiled the skewers with the glaze on two sides. You could also just do the whole thing on the grill.
Guava Glaze
Makes about 1 1/2 cups
1/4 cup fresh orange juice
2 Tbls. fresh lime juice
1/2 tsp. grated lime zest
1 Tbls. minced shallots
1 tsp. minced garlic
1 tsp. minced ginger
1/4 tsp. ground coriander
2 Tbls. sugar
1 cup guava pasteCombine all of the ingredients into a small saucepan and bring to a boil. Cook until the mixture is reduced slightly, about 5 minutes. Be careful - it’s easy to burn!

Thanks, thats quite useful to know! I must admit to being a bit hopeless in the kitchen, but I’m trying my best to learn. Admitting is the first step to recovery right!!? I promised to cook a whole meal for my wife this weekend for the first time - very exciting! I found some really simple recipes at this website, seems to be designed exactly for people like me, which is fantastic! Anyway, thanks, I’ll be sure to bookmark your site to read more.
