Cheesy Crostinis

Mom’s been serving these little treats for as long as I can remember.  Once you understand the basic recipe, you can make all kinds of variations.  Substitute or add olives, add some chipotle to the mayo, vary the type of cheese, etc.  What’s really nice is that you can make the toasted bread and the spread for a couple of days and then just broil them right before you want to serve them.

Cheesy Crostinis

Baguette
Olive Oil
Equal parts of:  Cheddar cheese, mayonnaise and green onions

Slice the baguette into 1/3 inch rounds.  Spray or brush with olive oil and bake at 250 degrees for about 15 minutes, until they are crusty on the outside but have a little give in the middle.

Combine the cheddar, mayo and green onions.  Spread on top each baguette round and broil for about 5 minutes, until the topping is golden and bubbly.
