Arugula Salad with Avocado, Tomatoes and Toasted Cumin Vinaigrette
April 2nd, 2009 | by JanetWe seem to have this Bobby Flay salad at least once a week. The avocado provides a creamy texture and the toasted cumin seeds create a flavor burst on your tongue. Yes, it’s worth picking up a jar of the cumin seeds - it will make you want to try them in other recipes. In this picture, we used a combination of arugula and spring mix.
Arugula Salad with Avocado, Tomatoes and Toasted Cumin Vinaigrette
Serves 4
1/4 cup fresh lime juice
2 Tbls. rice vinegar
1 Tbls. honey
1 Tbls. toasted cumin seeds
1/4 cup chopped cilantro
salt and pepper
1/4 cup olive oil
1/4 cup vegetable oil
4 tomatoes, cut into bite size pieces
2 avocados, cut into bite size pieces
1 large red onion, thinly sliced
2 cups arugula leavesWhisk together the lime juice, rice vinegar, honey, cumin seeds, cilantro, salt and pepper. Gradually whisk in both oils.
Add the rest of the ingredients into a salad bowl and toss with the vinaigrette.
