Asian Slaw

We usually like serving our ribs with cole slaw and when you have BBQ sauce on the ribs, the traditional slaw works great.  We frequently make an Asian Rib recipe, though, and I’ve adapted the traditional slaw concept to include Asian flavors.  When making this, just substitute the slaw ingredients you like to use (cabbage, carrots, carrots, onions, herbs, fennel, etc.) in your preferred quantities.  I usually mix it up as well but the recipe below is for the dish in the picture.

Asian Slaw

3 cups shredded napa cabbage
1 apple, cut into matchsticks
1/2 fennel bulb, slivered
3 green onions, sliced
2 Tbls. minced parsley
1 cup mayo
1 Tbls. white wine vinegar
1 Tbls. lemon juice
1 Tbls. honey
2 Tbls. soy sauce
1 tsp. sesame oil
1 Tbls. grated ginger

Combine the cabbage, apple, fennel, onion and parsley in a bowl.  Make the dressing by combining the rest of the ingredients in a separate bowl and whisk until smooth.  Toss the cabbage mixture with the dressing.  I like to chill it for about an hour before serving.
