Black Bean and Grilled Corn Salad
July 21st, 2009 | by JanetIt’s summertime and this is a frequent go to recipe with any kind of grilled meat, chicken or fish. I like the combination of the vegetables and beans shown in the picture but you can easily substitute or vary the ingredients based upon what you like and what’s in your fridge. The best part about it is the fresh lemony dressing with the secret ingredient - ground coriander.
Black Bean and Grilled Corn Salad
1 can black beans, drained and rinsed
2 ears of corn, grilled and cut from the cob
1/2 yellow pepper, diced
1 cup cherry tomatoes, cut into half
1/2 cup sliced green onions
3 Tbls. fresh cilantro, minced
3 Tbls. freshly squeezed lemon juice
6 Tbls. olive oil
1 tsp. ground coriander
salt and pepper to tasteAdd the beans, corn, pepper, tomato, green onions and cilantro into a large bowl. In a separate bowl, combine the lemon juice, olive oil, coriander and salt and pepper to make a dressing. Pour the dressing over the other ingredients and toss. Serve either at room temperature or chilled.
