Arugula and Watermelon Salad
November 18th, 2007 | by JanetEach bite of this salad gives you a sweet, tart, salty, refreshing combination. It reminds me of being in Portugal playing golf when our caddie came up to me and handed me a pignola right from the tree. These little pine nuts are inside the “cones” of the pignola trees and we munched on them throughout our round.
I’m finding that I can actually get pretty good watermelon year round so when it’s snowing out, we can have a little taste of summer.
Arugula and Watermelon Salad
serves 2
2 cups arugula
1 cup watermelon, cut into cubes
3 Tbls. toasted pine nuts
1/4 crumbled feta
2 Tbls. lemon juice
4 Tbls. extra virgin olive oil
salt and freshly ground pepperMake a dressing by whisking together the lemon juice, olive oil, salt and pepper. Toss the watermellon, arugula, feta and the dressing together. Top the salad with the pine nuts.
