One of Each Soup
December 3rd, 2007 | by JanetThe One of Each Soup is aptly named since there is one of each ingredient. The soup has a sweetness, thanks to the fruit, and just a little bit of heat from the curry. Next time I make this, I’m going to lighten it up by using non-fat, plain yogurt as a substitute for the cream. Also, this soup is just as good cold as it is hot.
One of Each Soup
1 large boiling potato, peeled and coarsely chopped
1 medium onion, coarsely chopped
1/2 cup celery heart (inner pale stalks with leaves), coarsely chopped
1 large Granny Smith apple, pared and coarsely chopped
1 banana, coarsely chopped
1 quart chicken broth
1 cup heavy cream
1 Tbls. unsalted butter
1 rounded tsp. curry powder
1 tsp. salt
1 Tbls. chopped fresh chives for garnishAdd the vegetables, fruit and broth to a heavy saucepan and simmer for about 15 minutes, of until the vegetables and fruit are very tender.
Add the cream, butter, curry powder and salt and heat but don’t boil. Puree soup in a blender or food processor until smooth. Serve with sprinkled chives.
